GRILLED CHICKEN SALAD W/ BAKED SWEET POTATO

INGREDIENTS:
• 2 BONELESS SKINLESS CHICKEN BREASTS, SEASONED, GRILLED, &CUBED
• 2 LARGE SWEET POTATOES, BAKED
• 1 C. KALAMATA OLIVES, PITTED
• 3 CELERY STALKS, CHOPPED
• 2 RED BELL PEPPERS, ROASTED AND DICED
• 1 BUNCH CILANTRO, CHOPPED
• ½ -1 C. CHIPOTLE AVOCADO MAYO
• ¼ C. RED ONION, DICED
• SALT & PEPPER

DIRECTIONS:
1. PREHEAT OVEN TO 400 DEGREES. COOK SWEET POTATOES 30-40 MINUTES ON A BAKING SHEET. LET COOL. CUT IN HALF LENGTHWISE. SET ASIDE.
2. GRILL CHICKEN, LET COOL, THEN CUT INTO SMALL CUBES. PUT INTO A MEDIUM SIZE BOWL
3. ADD ALL OTHER INGREDIENTS TO THE BOWL WITH CHICKEN. MIX WITH HANDS OR SPACTULA UNTIL WELL INCORPORATED.
4. SERVE CHICKEN SALAD ON TOPOF HALVED SWEET POTATO AND GARNISH WITH CILANTRO.
